Mango-Lime Popsicles

Our family has a new popsicle obsession and it began with Steel City Pops.

Jen and Aaron had one near their house in Dallas and when they moved back to Houston, they sadly tucked away their frequent buyer card and waited for the day that they would complete it…

Well, this past June, Steel City opened a location in the Heights and Jen’s popsicle dreams could once more be fulfilled and then passed on to future generations.

Every time we leave Steel City, I tell Jordan we gotta get an ice cream machine to try and replicate their Vanilla Bean popsicle because they are the best. But, I know we won’t even get a little bit close to their recipe so my resolve always fizzles pretty quickly.

But I’ve been bitten by the popsicle bug so I’m going to try my hand at some mango-lime pops  since my parents brought us two mangos last week and I haven’t gotten around to eating them.

I ordered these new popsicle molds because the ones I got from Walmart were not doing their job. I filled our Walmart molds with some Starbucks cold brew, as a trial run, and the dumb plastic sticks popped right out without bringing the frozen pops with it. Hopefully these new molds will work out better.

Ingredients:

  • 2 mangos, diced
  • ½ c. lime juice
  • ½ c. simple syrup

Directions: Dice mangoes and purée until smooth. Add lime juice and simple syrup. Mix well.

Pour mixture into popsicle molds.

Add popsicle sticks…

And freeze until solid, at least 4 hours.
