It’s been a few weeks since the last time I made popsicles, so we are obviously running low.
J.D. has been on a hunt for decent peaches this summer and we are sort of striking out. We managed to snag a couple of decent ones the last time we went grocery shopping but the texture was not great. So, they were earmarked for my next batch of popsicles.
- 4 peaches, peeled and pitted
- ½ c. simple syrup
- ½ c grenadine
- 2 tbsp lime juice
Directions: Peel and roughly chip the peaches.
Purée the peaches in a food processor with a little simple syrup until the mixture is smooth. Add the remaining simple syrup and grenadine. Mix well.
After tasting the mixture, it needed a little citrus to cut the sweetness, so I did a last minute addition of lime juice.
Add popsicle sticks and freeze until solid. Mmm…
I had a little bit of the mixture left after filling our popsicle mold so I let the kids do a little taste test. Bean tasted it, got a straw and then started gulping it down. Belle had to fight a little to get her share. She got a few spoonfuls before Bean got the last drop. She was pretty mad and made sure he knew she it with some evil stares and some forceful grunts.
