Easy Egg Salad 

We had a couple of leftover hard boiled eggs and I decided to whip up egg salad for lunch.


  • 4 eggs, hard boiled
  • ¼ c. mayonnaise
  • ½ tsp. mustard
  • 2 tbsp. chives, chopped
  • ¼ tsp. paprika
  • Salt + Pepper, to taste

Directions: Peel and roughly chop hard boiled eggs.

Mix in mayonnaise, mustard and chives. Add salt, pepper and paprika to taste.

Serve with crackers for a quick and easy lunch!

To make it a little more heartier, you can add bacon or sliced olives! This is a great base recipe and can be dressed up in a lot of different ways.

If you want to serve it to Bean, DO NOT ADD “the green things!” I cannot emphasize this enough! Reserve a scoop of plain, non-green onioned egg salad to avoid an argument.

Actually, there’s going to be an argument about halfway through the meal when Bean declares that “the babies want real, hot food.”
