A few nights ago, J.D.’s aunt texted us to see if we had any special requests for Thanksgiving dinner, to which the answer is always chocolate peanut clusters.
They’re my favorite holiday snack because you can eat them while chasing kids around and there’s literally no limit to how many you can eat.
After we made our special request, I couldn’t stop craving them. But, we didn’t have any peanuts on hand so I had to improvise with pistachios!
- 1/4 c. pistachios
- 1/2 c. melting chocolate
- Various Toppings — Coconut Flakes, Nonpareils, etc.
- Parchment Paper
Directions: Shell pistachios. Make sure all skin of the pistaciaos are cleanly removed.
Place melting chocolate in a microwave safe bowl and heat for 30 seconds at a time until smooth.
Stir in pistachios.
Place spoonfuls of the mixture on wax paper.
If you want, add your favorite topping¹ and allow to cool.
They are actually pretty good but they’re not similar enough to the chocolate peanut clusters that started this whole thing. I guess I’ll have to wait until Thanksgiving to indulge that craving.
¹My favorite topping is nonpareils, the best member of the sprinkles family.
